Halibut

  • 4 halibut fillets

Seasoning

  • 2 tbsp unsalted butter
  • 1 tbsp lemon juice

Instructions

  1. Prepare the fillets: First, pat the halibut fillets dry with paper towels to remove any excess moisture. This helps achieve a nice sear. Season both sides evenly with garlic powder, paprika, black pepper, and sea salt.
  2. Heat the skillet and begin cooking: Add the olive oil to a large skillet and heat over medium heat. When the oil shimmers and is hot, carefully place the seasoned halibut fillets in the pan. Let them cook undisturbed for 3 minutes on the first side to develop a golden crust.
  3. Add butter and lemon juice, then flip: After 3 minutes, add the unsalted butter and lemon juice to the pan. Carefully flip the fillets and continue cooking for another 3 to 4 minutes. The fish should be opaque and flake easily with a fork when done.
