Description

A simple and flavorful Garlic Olive Oil Pasta recipe that combines al dente spaghetti with a fragrant garlic and olive oil sauce, garnished with fresh parsley. This quick and easy pasta dish makes a perfect weeknight dinner or a delightful side.

Ingredients

Ingredients

  • ½ lb Spaghetti (or another long pasta, such as fettuccine)
  • 4 tbsp Olive Oil
  • 4 Garlic Cloves, minced
  • ¼ tsp Parsley (optional)

Instructions

  1. Cook pasta and start the sauce: Cook the pasta according to the package instructions until al dente. If using leftover pasta, you can skip this step. While the pasta is nearly done, heat olive oil in a skillet over medium heat. Once the oil is hot, add the minced garlic and sauté for 3-4 minutes until fragrant and lightly golden.
  2. Add pasta to the sauce: Drain the cooked pasta, reserving about half a cup of the pasta cooking water. Add the drained pasta to the skillet with the garlic and olive oil.
  3. Mix everything together: Continue cooking and tossing the pasta in the skillet to ensure it is evenly coated with the olive oil and garlic. If the pasta seems dry, gradually add a few tablespoons of the reserved pasta water and mix well to loosen the sauce. Remove from heat, sprinkle with parsley if using, and serve immediately.

Notes

  • You can substitute spaghetti with other long pasta varieties like fettuccine or linguine.
  • Use fresh garlic for the best aromatic flavor.
  • Reserving pasta water is key to helping the sauce cling to the pasta and to adjust consistency.
  • This dish pairs wonderfully with protein-based sides like meatballs or roasted vegetables.
  • For a bit of heat, add red pepper flakes while sautéing the garlic.
