Ingredients
Lamb Ribs
- 1 lamb rib rack (cut into 3 or 4 servings)
Seasoning & Sauce
- 3 tablespoons olive oil
- 6 cloves garlic (minced)
- 1 tablespoon fresh rosemary (chopped)
- 1/4 cup chicken broth
- 3 tablespoons brown sugar
- 5 sprigs fresh rosemary
- Salt and pepper to taste
Garnish
- Chopped green onions
Instructions
- Preheat: Preheat oven to 400 degrees F (204 degrees C).
- Season: Season lamb ribs generously with salt and pepper on both sides to enhance the flavor.
- Sear: Heat a large cast-iron skillet over medium-high heat until hot. Add the olive oil, then place the lamb ribs into the pan. Sear on each side for about 5 minutes or until a golden-brown crust forms.
- Transfer: Remove the lamb ribs from the skillet and place them on a plate. Cover loosely with foil to keep warm.
- Sauté: Reduce heat to medium, add the minced garlic to the same skillet, and sauté for about 30 seconds or until fragrant, being careful not to burn the garlic.
- Sauce: Stir in the chopped fresh rosemary and cook for another 30 seconds. Add the brown sugar and chicken broth, stirring continuously until the sugar has dissolved completely. Season the sauce with salt and pepper to taste.
- Reduce: Increase heat to medium-high and cook the sauce, stirring frequently, until it thickens slightly, about 5-8 minutes.
- Baste: Return the lamb ribs to the pan. Spoon the thickened sauce over the ribs, add a few sprigs of fresh rosemary on top, then transfer the skillet to the preheated oven. Bake for 7-10 minutes to finish cooking through.
- Broil: For a final touch, broil the ribs for 1-2 minutes to achieve a caramelized glaze without burning.
- Serve: Remove from oven and garnish the lamb ribs with chopped green onions. Let the meat rest for 10 minutes before slicing for optimal tenderness and juiciness.
Notes
- Resting the meat after cooking allows juices to redistribute for better texture.
- Use a cast-iron skillet for best searing and oven compatibility.
- Adjust brown sugar amount according to desired sweetness level.
- Broiling time is short — watch carefully to avoid burning.
- Chicken broth adds moisture and depth but can be substituted with vegetable broth for a milder flavor.
