Instructions

  1. Soften Cream Cheese: Remove the cream cheese packaging and place the block in a microwave-safe bowl or plate. Microwave for 15 seconds, flip the block, and microwave for another 10–15 seconds until softened but not melted.
  2. Add Marshmallow Fluff: Transfer the softened cream cheese to a mixing bowl fitted with a whisk attachment or use a hand mixer in a large bowl. Scoop out the marshmallow creme using a spoon warmed under hot water and dried. Add the marshmallow fluff, fresh clementine juice, and sea salt to the bowl. Beat at a steady speed, avoiding whipping, until the mixture is smooth and creamy.
  3. Chill: Cover the creamy dip and refrigerate for about 30 minutes so it chills thoroughly and firms up slightly.
  4. Assemble: Wash and completely dry all fruits to prevent the dip from sliding off. Arrange the fruits on a large flat platter in the order of a rainbow. Using a spoon, scoop the chilled dip and place dollops at the bottom of the rainbow to resemble clouds. For added visual effect, use the back of the spoon to create texture on the dip clouds. Serve immediately for best freshness.
