Perfect for a refreshing treat or a festive gathering, this recipe combines soft-baked cookies with a smooth, tangy frosting and colorful fruit garnishes for a visually stunning and delicious dessert.

Ingredients

Dry Ingredients

  • 2 1/2 cups all-purpose flour (300g)
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda

Wet Ingredients

  • 1 cup dairy free butter (2 sticks, 113g)
  • 1 cup sugar (200g)
  • 1 teaspoon vanilla extract
  • 1 large egg (room temperature)

Frosting

  • 3.5 ounces vegan cream cheese (1/2 Violife container)
  • 1/4 cup dairy free butter (1/2 stick, 56g)
  • 2 1/2 cups powdered sugar (300g)
  • 1 teaspoon vanilla extract

Toppings

  • Assorted fresh fruit (chopped)
  • Fresh mint (for garnish)

Instructions

  1. Mise en place: Preheat your oven to 350˚F (175˚C) and line a baking sheet with parchment paper. Measure out all ingredients carefully before starting to ensure a smooth baking process.
  2. Mix the dry ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, and baking soda until evenly combined. Set this aside for later incorporation.
  3. Beat the wet ingredients: Using an electric mixer in a large bowl, beat the dairy-free butter and sugar together until the mixture becomes light and fluffy. Add the egg and vanilla extract, then continue beating until fully combined and smooth.
  4. Combine the dough: Gradually add the dry flour mixture into the wet ingredients, mixing until just incorporated. Scrape the sides of the bowl as needed. Allow the dough to rest for 10 to 15 minutes to let the flour hydrate for better texture.
  5. Bake the cookies: Scoop the dough into 2-tablespoon portions and place them spaced on the prepared baking sheet. Bake in the preheated oven for 10–12 minutes, or until the cookie edges are slightly golden but the cookie tops remain soft-set. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  6. Make the frosting: In a large bowl, use an electric mixer to beat the vegan cream cheese, dairy-free butter, and vanilla extract until smooth and combined. Slowly add the powdered sugar while mixing, continuing until the frosting is smooth and spreadable.
  7. Decorate the cookies: Once cookies are completely cool, spread an even layer of the vegan cream cheese frosting on each cookie. Top with assorted chopped fresh fruit and garnish with fresh mint leaves if desired. Serve immediately or refrigerate until ready to enjoy.

Notes

  • Resting the dough allows the flour to fully hydrate, resulting in a softer cookie texture.
  • Ensure cookies are fully cooled before frosting to prevent melting and sliding.
  • Feel free to customize toppings with seasonal fruits such as berries, kiwi, or peaches.
  • Store decorated cookies in the refrigerator to keep the frosting fresh; bring to room temperature before serving for the best flavor.
  • You can substitute other vegan cream cheese brands if Violife is unavailable.
