Instructions
- Prepare and cook potatoes: Peel and dice the russet potato into bite-sized cubes. Heat one teaspoon of neutral oil in a pan over medium heat. Once hot, add the diced potatoes and sprinkle a small pinch of salt over them. Pan sear the potatoes for 5-6 minutes until they become golden brown and crispy on some sides. Turn off the heat, cover the pan with a lid, and allow the potatoes to steam and cook through.
- Prepare the fruits: While the potatoes steam, wash the red apple, pear, blueberries, grapes, and strawberries under water. Dice the mango, red apple, pear, and strawberries. Slice the banana and cut the grapes in half.
- Combine ingredients: Transfer all the prepared fruits to a large mixing bowl. Add the cooked potatoes. Sprinkle the roasted cumin, kala namak, kosher salt, and chaat masala evenly over the mixture. Pour in the cilantro-mint chutney and squeeze the juice of a whole lemon on top. Toss everything together thoroughly to combine all the flavors.
