This delightful drink combines the tangy brightness of ruby grapefruit with the sparkle of pink prosecco and a smooth vodka kick, all blended into a frosty slush and served with a sugary rim and candied grapefruit garnish.
Ingredients
For the Cocktail
- 3 tbsp white granulated sugar
- Juice of 1 large ruby grapefruit (approx 240ml or 1 cup of store-bought juice)
- 60 ml (1/4 cup) vodka
- 480 g (2 cups) ice
- 360 ml (1 1/2 cups) red or pink prosecco
For Garnish
- Candied grapefruit slices to decorate
Instructions
- Prepare Sugar Rim: Pour the sugar onto a flat plate. Dip the rim of each glass in grapefruit juice to moisten, then gently dip the rims into the sugar to coat evenly. Set the glasses aside.
- Blend Cocktail Slush: In a blender, combine the remaining grapefruit juice, vodka, and ice. Blend on high until the mixture becomes a smooth slush consistency. Pause occasionally to scrape down the sides to ensure even blending.
- Assemble the Drink: Spoon the grapefruit slush evenly into the prepared sugar-rimmed glasses.
- Top with Prosecco and Garnish: Pour the pink or red prosecco gently over the slush in each glass. Finish by decorating the rim or side of each glass with a candied grapefruit slice.
- Serve Immediately: Serve the frozen cocktails straight away to enjoy the refreshing icy texture and the sparkling prosecco fizz at their best.
Notes
- If fresh grapefruit juice is unavailable, high-quality store-bought ruby grapefruit juice works well.
- For a less sweet version, reduce the amount of sugar on the rim or omit it altogether.
