Ingredients

Cheese

  • 10 ounce log goat cheese

Breading and Coating

  • 1 egg
  • 1 tablespoon water
  • 1/4 cup all purpose flour, plus more if needed
  • 1/4 cup breadcrumbs, plus more if needed
  • 1/4 cup za’atar

Frying

  • Extra virgin olive oil (about 2 tablespoons)


Instructions

  1. Freeze the cheese: Freeze the goat cheese for 15 minutes to firm it up, making it easier to slice and preventing it from melting too quickly during frying.
  2. Prepare a dredging station: In a shallow bowl, whisk together the egg and 1 tablespoon of water. In two other shallow bowls, place the flour in one and the breadcrumbs in the other. Have a plate with za’atar set aside for coating later.
  3. Slice the cheese: Remove the goat cheese from the freezer and unwrap it. Cut into 1/2-inch thick discs, being careful to keep the slices uniform for even cooking.
  4. Dredge the cheese: Dip each cheese disc into the egg mixture first, then coat with flour, followed by the breadcrumbs. Shake off excess coating and set aside on a tray or cutting board. Replenish flour and breadcrumbs as necessary during the process.
  5. Fry the cheese: Heat approximately 2 tablespoons of extra virgin olive oil in a large nonstick skillet over medium-high heat. When the oil is shimmering hot, add the cheese discs, mindful not to overcrowd the pan. Fry each side for about 30 seconds or until golden brown. Remove and drain on paper towels to absorb excess oil.
