This French Onion Sheet Pan Chicken recipe combines tender chicken thighs with caramelized onions, melted Gruyere cheese, and crusty bread for a hearty, flavorful one-pan meal. Ingredients
Chicken and Toppings
- 2 lbs boneless, skinless chicken thighs (about 6-8 thighs)
- 1 ½ cups grated Gruyere, Swiss, or Parmesan cheese (or a blend)
- 3 cups day old bread hunks
- 1 tablespoon finely chopped thyme & parsley (or 1 teaspoon dried herbs)
Onions and Butter Mixture
- 2 medium yellow onions
- ¼ cup butter, melted
- 2 cloves garlic, minced
- 1 teaspoon salt
- ¾ teaspoon pepper
- ½ teaspoon salt (for onions)
Deglazing Liquid
- 1 cup dry white wine or beef, chicken, or vegetable broth (or a mix of wine & broth)
Instructions
- Preheat the Oven: Preheat your oven to 375°F to prepare for baking the onions.
- Slice Onions: Thinly slice the yellow onions about ¼ inch thick to ensure even caramelization.
- Bake the Onions: Spread the sliced onions on a rimmed baking sheet, toss with ½ teaspoon salt and 1 tablespoon melted butter. Bake for 30-35 minutes until onions soften, become translucent, start to brown, and stick slightly to the pan.
- Prepare Butter Mixture: While onions bake, combine the remaining melted butter, minced garlic, half of the chopped herbs, remaining salt, and pepper in a small bowl, creating a flavorful butter sauce.
- Increase Oven Temperature: Once onions are done, remove from oven and increase the oven temperature to 425°F to prepare for roasting the chicken.
- Deglaze Pan and Assemble: Deglaze the baking sheet pan with the white wine or broth, scraping up browned bits. Add the bread hunks, drizzle with half the butter mixture, and toss to coat. Nestle the chicken thighs into the bread mixture and drizzle with the remaining butter mixture. Place a small pile of the roasted onions atop each chicken thigh.
- Bake the Chicken: Bake for 25-30 minutes until chicken is nearly fully cooked through. Carefully remove the pan from the oven, sprinkle grated cheese over the chicken, then return to the oven and bake an additional 8-10 minutes until cheese is bubbly and golden brown.
