  • 75 g Nut flour (hazelnut flour, almond flour, or pistachio flour)
  • Large pinch of salt
  • Chopped roasted nuts (pistachio, hazelnut, almond) for topping


Instructions

  1. Make Brown Butter: Heat the unsalted butter in a saucepan over medium heat. Initially, it will melt and then start foaming. Watch carefully and stir regularly until the white milk solids at the bottom turn golden brown and emit a nutty aroma. Remove from heat before it burns, then let it cool to room temperature.
  2. Prepare Egg White Mixture: In a bowl, whisk the egg whites until foamy, then gradually whisk in the icing sugar until well combined.
  3. Add Brown Butter to Batter: Pour the cooled brown butter into the egg white and sugar mixture, mixing well.
  4. Divide and Fold in Flours: If making all three flavors, divide the batter into three equal parts. Fold each portion gently into a combination of 25 g all-purpose flour, 25 g of either hazelnut, almond, or pistachio flour, and a large pinch of salt. For a single flavor, fold all the appropriate flour directly into the batter.
  5. Chill Batter: Transfer each batter portion into separate piping bags. Refrigerate the bags and allow them to rest for one hour.
  6. Preheat Oven and Prepare Molds: While the batter rests, preheat your oven to 175°C (347°F) and prepare the financier molds by lightly greasing or using a non-stick preparation.
  7. Fill Molds: Use the piping bags to fill the molds with the different flavored batters as desired. Sprinkle the tops with chopped roasted nuts corresponding to each flavor for added texture and decoration.
