- 240 ml (1 cup) Full Cream / Whole Milk
- 240 ml (1 cup) Sparkling Water (or still water)

Instructions
- Mix Dry Ingredients: In a large mixing bowl, combine the buckwheat flour and either salt (if making savory crepes) or caster sugar (if making sweet crepes). Make a well in the center of the mixture.
- Add Wet Ingredients: Pour the whisked eggs, whole milk, and sparkling water into the well. Whisk everything together thoroughly until you have a thin, smooth batter.
- Rest the Batter: Let the batter rest for at least 30 minutes, or up to 2 hours, allowing the buckwheat flour to fully absorb the liquid and the batter to thicken slightly.
- Preheat and Grease Pan: Heat a medium-sized non-stick pan over medium heat and lightly grease it with melted butter to prevent sticking.
- Cook the Crepes: Pour a small amount of batter into the pan, swirling it around to form a thin, even layer. Cook for about 1 minute per side, flipping when the edges start to curl and the crepe has set.
- Adjust Batter Consistency: If the batter is too thick and does not spread easily, add a little more water or milk. If the batter is too runny, add more buckwheat flour until the desired consistency is reached.
- Storage: Allow crepes to cool completely before storing. Cover with plastic wrap or aluminum foil and refrigerate for up to 4 days.
