Ingredients
Dough
- 5 tablespoons warm water (105-110°F)
- 1/2 teaspoon sugar
- 1/2 teaspoon active dry yeast
- 3/4 cup all-purpose flour
- 1/4 teaspoon salt
- 1 tablespoon olive oil, plus extra for greasing
- Cornmeal for the baking pan
Toppings
- 2 slices thick-cut bacon
- 3 tablespoons feta cheese
- 4-5 dried Mission figs, sliced
Instructions
- Activate the yeast: In a 2-cup measuring cup, combine warm water, sugar, and active dry yeast. Stir to dissolve and let it sit for 5 minutes until foamy. If no foam appears, the yeast is dead and the process should be restarted.
- Make the dough: Add the flour to the yeast mixture and stir. Then add salt and olive oil. Stir with a fork until a shaggy dough forms. Transfer to a floured surface and knead for about 1 minute until the dough is pliable and not sticky.
- First rise: Grease the measuring cup with extra olive oil, place the dough back in, and turn to coat it with oil. Let it rise in a warm place until doubled in bulk, approximately 1 hour.
- Cook the bacon: Slice bacon into lardons and fry in a dry skillet over medium heat until almost crispy but not fully done to allow finishing in the oven. Drain on paper towels and reserve bacon grease.
- Preheat the oven: Heat oven to 400°F and place a pizza stone inside if available. Otherwise, prepare a baking sheet with a light coating of cornmeal.
- Shape the dough: Flour your hands, remove the dough from the cup, and knead for 1 minute. Pat out dough into a circle about 6 inches in diameter, stretching it gently by draping over your fists and working around the edges.
- Prepare for baking: Sprinkle cornmeal on pizza stone or baking sheet. Place the dough on it, brush with reserved bacon grease, then top with cooked bacon pieces and feta cheese.
- Bake the pizza: Bake for about 10 minutes until the dough starts to brown. Baking time may vary depending on the use of pizza stone or baking sheet, so watch closely.
- Finish and serve: Remove the pizza from oven, top with sliced figs, drizzle with a little more bacon grease if desired, and serve immediately for best flavor and texture.
Notes
- Ensure your yeast is fresh for proper dough rise; dead yeast won't foam.
- Reserving bacon grease adds depth and flavor when brushed on the dough.
- Adjust baking time slightly if using a baking sheet instead of a pizza stone.
- Stretch the dough gently to avoid tearing and maintain a nice thin crust.
- Serve immediately after adding figs for fresh texture and taste.
