Ingredients

Dry Ingredients

  • 2 cups rolled oats
  • 1/2 cup pecan pieces (optional)
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon allspice
  • 1/2 teaspoon kosher salt

Fruit

  • 1 apple, cut into small cubes (or 1 cup blueberries, raspberries, raisins, or dried cranberries)

Wet Ingredients

  • 1 large egg (or flax egg for vegan)
  • 2 cups milk or non-dairy milk
  • 1/3 cup pure maple syrup, plus 1 tablespoon for drizzling
  • 2 teaspoons pure vanilla extract
  • 1 tablespoon salted butter (or coconut oil for vegan)


Instructions

  1. Preheat Oven: Preheat your oven to 375 degrees Fahrenheit to prepare for baking the oatmeal.
  2. Prepare Baking Dish & Dry Ingredients: Butter or oil an 8 x 8", 9 x 9", or 7 x 11" small casserole dish. In a medium bowl, combine rolled oats, pecan pieces (if using), baking powder, cinnamon, allspice, and kosher salt thoroughly.
  3. Layer Fruit: Pour the dry oat mixture into the prepared baking dish and spread evenly. Arrange the cubed apple or your choice of fruit evenly over the top in a layer.
  4. Mix Wet Ingredients & Combine: In the same mixing bowl, whisk the egg (or prepared flax egg). Add the milk, 1/3 cup maple syrup, and vanilla extract. Drizzle this mixture evenly over the oats and fruit in the baking dish. Use a fork to gently stir and evenly incorporate the liquid and dry ingredients without disturbing the fruit layer.
  5. Bake: Place the dish in the preheated oven and bake for 40 to 45 minutes, until the top is golden and the baked oatmeal has fully set.
  6. Cool: Remove from the oven and allow the oatmeal to cool for at least 10 minutes to let it firm up and develop texture.
