Instructions
- Combine Dry Ingredients: Add the rolled oats and ground flax or chia seeds to a medium mixing bowl. If preparing a flavored version, also add any spices such as cinnamon at this point, stirring to evenly distribute.
- Add Wet Ingredients: Pour in the nut butter, maple syrup or honey, vanilla extract if using, and a pinch of salt. Stir thoroughly until all ingredients are well combined and form a sticky mixture.
- Add Flavor Ingredients: Portion out the base mix if desired, or incorporate additional flavor ingredients listed for each variation by mixing them evenly into the base mixture.
- Portion the Bites: Use a cookie scoop (size #40, about 4 teaspoons) or tablespoons from your drawer to scoop and shape the mixture into bite-sized portions. Depending on the scoop size and flavor additions, expect to make between 18-22 bites. Using a #70 cookie scoop (about 1 tablespoon) can yield approximately 36 bites.
- Chill and Set: Place the formed bites on a tray or plate lined with parchment paper and refrigerate for at least 20 minutes to firm up before serving. Store leftovers in the refrigerator in an airtight container for up to one week or freeze for longer storage.
