Description

Eggs Florentine Benedict is a delightful twist on the classic Eggs Benedict, featuring perfectly poached eggs served atop toasted English muffins layered with a savory mushroom and spinach sauté, all generously topped with a creamy Parmesan cheese hollandaise sauce. This quick and elegant breakfast or brunch dish combines rich flavors and textures in just 20 minutes, making it a delicious and nutritious way to start your day.

Ingredients

Eggs and Poaching

  • 4 large eggs
  • Water for poaching

Mushroom and Spinach Mixture

  • 2 Tablespoons vegetable oil (or olive oil)
  • 8 ounces mushrooms, sliced
  • 3 cups fresh spinach (packed) or 1.5 cups frozen spinach
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Base and Toppings

  • 2 English muffins
  • 1/2 cup Parmesan cheese hollandaise sauce
  • Optional garnish: spinach leaves or additional Parmesan cheese

Instructions

  1. Poach the Eggs: Heat a large pot of water over medium heat. Create a gentle vortex by stirring the water with a spoon. Carefully lower one egg at a time into the center of the vortex. Cook the eggs for approximately 3 minutes for a runny yolk and fully cooked whites. Gently poke the egg to check doneness; the whites should be firm yet delicate. Remove each egg with a slotted spoon and set aside on a plate or small bowl to drain. Repeat with remaining eggs.
  2. Sauté Mushrooms: While poaching the eggs, heat a large skillet over medium heat. Add 2 tablespoons of vegetable or olive oil. Once hot, add the sliced mushrooms and leave them undisturbed for about 3 minutes to allow browning and juices to release.
  3. Cook Spinach and Season: Add garlic powder, salt, black pepper, and the spinach to the mushrooms. Stir the mixture and cook for 2-3 minutes until the spinach wilts and combines well with the mushrooms. Remove from heat.
  4. Toast English Muffins: Slice the English muffins in half and toast them to your preferred level of crispiness.
  5. Assemble the Benedict: Place the toasted English muffin halves on serving plates. Spoon the mushroom and spinach mixture evenly onto each muffin half. Gently place a poached egg on top of each stack by sliding it from the plate or bowl it was resting on.
  6. Add Hollandaise and Garnish: Generously spoon 2 tablespoons of Parmesan cheese hollandaise sauce over each poached egg. Garnish with fresh spinach leaves or extra Parmesan cheese if desired. Serve immediately to enjoy the full flavor and texture.

Notes

  • For perfectly poached eggs, fresh eggs work best as they hold their shape better in water.
  • To make the hollandaise sauce easier to handle, keep it warm but not hot before serving to prevent separation.
  • You can substitute fresh spinach with frozen spinach (reduce quantity by half and thaw well before using).
  • For a richer flavor, consider using olive oil instead of vegetable oil for sautéing.
  • If you prefer a milder garlic flavor, reduce the garlic powder to 1/8 teaspoon.
  • This dish pairs wonderfully with a light salad or roasted potatoes for a fuller brunch experience.
