Description

Egg Dum Biryani is a fragrant, flavorful Indian rice dish featuring perfectly cooked basmati rice layered with spiced eggs and a rich onion-yogurt masala. The dish is slow-cooked using the traditional 'dum' method, which allows the spices and aromas to deeply infuse the rice and eggs, resulting in a delightful and aromatic meal perfect for sharing.


Ingredients

Rice and Spices

  • 2 cups Basmati rice (soaked 30 minutes)
  • 6-8 whole Green cardamom pods
  • 2 whole Bay leaves
  • 1 inch Cinnamon stick
  • 1 teaspoon Cumin seeds
  • 4-5 cups Water (for boiling)
  • Salt to taste

Eggs and Marinade

  • 8 large Eggs (hard-boiled and peeled)
  • 2 tablespoons Vegetable oil (for frying)
  • 1 teaspoon Red chili powder
  • ½ teaspoon Turmeric powder
  • Salt to taste

Onion Masala and Spices

  • 3 large Onions (thinly sliced and fried until golden)
  • 1 cup Plain yogurt (whisked)
  • 2 tablespoons Ginger-garlic paste
  • 2 teaspoons Red chili powder
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Garam masala powder
  • Salt to taste

Additional Ingredients

  • ½ teaspoon Saffron (soaked in ¼ cup warm milk)
  • 3 tablespoons Ghee or butter
  • ½ cup Fresh mint leaves
  • ½ cup Fresh cilantro leaves


Instructions

  1. Soak and prepare rice: Rinse the basmati rice thoroughly and soak it in water for 30 minutes to ensure fluffy, separate grains after cooking.
  2. Boil and peel eggs: Hard-boil the eggs until fully cooked. Once cooled, peel them carefully to prepare for frying and layering.
  3. Fry eggs with spices: Heat vegetable oil in a pan and fry the peeled eggs coated with turmeric powder, red chili powder, and salt until they turn a golden color, enhancing their flavor.
  4. Fry onions until golden brown: Thinly slice onions and fry them in oil until they become deep golden brown and crisp. This adds sweetness and texture to the biryani.
  5. Prepare onion-yogurt paste: Blend half of the fried onions with whisked plain yogurt until smooth to create a flavorful masala base.
  6. Sauté ginger-garlic and masala spices: In a pan, cook the ginger-garlic paste until aromatic. Add the onion-yogurt paste along with red chili powder, turmeric powder, garam masala, and salt. Sauté the mixture well to develop rich flavors.
  7. Combine fried eggs with masala: Gently fold the fried eggs into the prepared masala mixture, cooking briefly to allow the eggs to absorb the spices.
  8. Cook rice with whole spices: In a large pot, bring water to a boil with the cardamom, bay leaves, cinnamon stick, cumin seeds, and salt. Add the soaked rice and cook until it is about 70% done. Drain the rice thoroughly.
  9. Layer biryani ingredients: Spread the spiced egg masala evenly in a heavy-bottomed pot. Layer the partially cooked rice over the eggs. Top the rice with remaining fried onions, fresh mint and cilantro leaves, saffron soaked in warm milk, and ghee or butter for richness and aroma.
  10. Dum cook the biryani: Cover the pot tightly with foil and then the lid to trap steam. Cook on high heat for 3 minutes to build steam, then reduce to low heat and cook for 45 minutes. This slow cooking infuses all flavors and completes the cooking process.
