Description

This easy vegetarian Pad Thai recipe offers a delicious and authentic Thai dish made with rice noodles, crispy tofu, crunchy bean sprouts, and fresh Chinese chives, all tossed in a tangy Pad Thai sauce. Ready in just 25 minutes, it's perfect for a quick, flavorful meal with a healthy balance of protein and vegetables.

Ingredients

Pad Thai

  • 1.75 oz Rice Noodles
  • 2.5 tbsp Pad Thai Sauce
  • 1 oz Tofu, cut into small pieces
  • 1.5 oz Bean Sprouts
  • 1 oz Chinese chives (also known as garlic chives)
  • 1 Egg
  • 1 tbsp Vegetable Oil
  • 0.5 oz Crushed roasted peanuts
  • 1 Lime, cut into wedges
  • 1 pinch Chili Powder
  • 1 tbsp Water (optional)

Instructions

  1. Prepare rice noodles: Boil or soak the rice noodles in boiling water according to package instructions until soft, then drain and set aside.
  2. Cook tofu: Heat vegetable oil in a pan over medium heat. Add tofu pieces and stir-fry until golden and slightly crispy. If using puff tofu, fry until the tofu starts to puff up.
  3. Add noodles and sauce: Add the cooked rice noodles to the pan. Stir-fry briefly, then pour in the Pad Thai sauce. Stir well to combine all ingredients evenly.
  4. Cook egg: Push noodles to one side of the pan and crack the egg into the empty side. Scramble the egg gently until slightly cooked, then mix it thoroughly with the noodles.
  5. Add vegetables and peanuts: Toss in the bean sprouts and Chinese chives. Stir everything together to combine. Add crushed roasted peanuts now or sprinkle on top when serving.
  6. Serve: Plate the Pad Thai and top with additional crushed peanuts, a pinch of chili powder to taste, and a wedge of lime for squeezing over the dish.

Notes

  • Soak or boil noodles according to package instructions to avoid overcooking.
  • If Pad Thai sauce is not available, you can make your own with tamarind paste, fish sauce substitute, sugar, and lime juice.
  • Adjust chili powder quantity based on your heat preference.
  • For a vegan version, omit the egg or substitute with a scrambled tofu scramble.
  • Adding a splash of water during stir-frying can help loosen the noodles if they stick together.
