- 1 cup raw cashews (soaked overnight or 2 hours in boiling water)
- 1 cup non-dairy milk (rice, almond, or cashew milk recommended)
- 1 large potato (peeled and cut into large pieces)
- 2 whole carrots (peeled and cut into large pieces)
- 1½ tablespoons nutritional yeast
- ¼ cup lemon juice (approx. one whole lemon)
- 2 teaspoons fine salt
- ¼ teaspoon black pepper
Instructions
- Soak Cashews: Soak the raw cashews in room temperature water overnight or cover them in boiling water and let soak for at least 2 hours. Drain and rinse thoroughly before use to ensure they blend smoothly into the sauce.
- Boil Vegetables: Peel and cut the potato and carrots into large pieces. Place them in a 4-quart or larger pot, cover with water about 2 inches above the vegetables, and bring to a rolling boil over medium-high heat. Cook for 10-15 minutes, or until the vegetables are tender when pierced with a fork. Drain the cooked vegetables.
- Blend Ingredients: Add the soaked cashews, boiled potato and carrots, non-dairy milk, nutritional yeast, lemon juice, salt, and black pepper into a high-speed blender. Blend on high until the mixture becomes smooth, creamy, and well combined.
- Heat Sauce (Optional): The sauce can be served immediately cold or warmed. To heat, pour the desired amount into a pan on low heat and stir frequently until warmed through, making sure it does not scorch.
- Serve and Enjoy: Use the sauce as a cheese substitute on pasta, vegetables, nachos, or as a dip. Store any leftovers in an airtight container in the refrigerator for up to 5 days.
