Ingredients
For the Pasta
- 3 tablespoons extra-virgin olive oil
- 1 garlic clove, smashed
- 2 teaspoons chopped fresh rosemary
- Pinch of crushed red pepper flakes
- 3 tablespoons tomato paste
- ¾ cup anelli, ditalini, or other short tubular pasta
- Kosher salt and freshly ground black pepper, to taste
- 2½ cups water
For Garnish
- ⅓ cup shaved Parmesan cheese
- Fresh basil leaves
Instructions
- Infuse Olive Oil: Pour olive oil into a medium saucepan and add the smashed garlic. Cook gently over medium-low heat, stirring occasionally, until the garlic becomes fragrant, about 2 minutes. Add the chopped rosemary and a pinch of crushed red pepper flakes, cooking for another minute until the herbs are aromatic.
- Add Tomato Paste and Boil: Remove the pan from heat and stir in the tomato paste until fully combined. Pour in 2½ cups of water and return the pan to the stove. Turn the heat to high and bring the mixture to a rolling boil.
- Cook Pasta: Stir in the pasta and season generously with kosher salt. Continue cooking, stirring regularly, until the pasta is al dente, about 12 minutes.
- Finish and Season: Remove the pan from heat and fold in the shaved Parmesan cheese. Taste and adjust seasoning with additional salt and freshly ground black pepper if desired.
- Serve: Divide the pasta between two bowls or plates and garnish with fresh basil leaves. Serve immediately. Store leftovers in an airtight container and refrigerate for up to 3 days.
