Pasta Bake Variation

  • 8 ounces mozzarella cheese, torn


Instructions

  1. Prepare the sauce: In a large saucepan, melt the butter over medium-low heat. Add the minced garlic and crushed red pepper flakes, stirring continuously until fragrant, about 5 minutes.
  2. Add vodka and simmer: Pour in the vodka and bring the mixture to a simmer. Let it reduce by one-third, cooking for about 2 to 3 minutes to concentrate the flavors.
  3. Combine tomatoes and seasonings: Stir in the crushed tomatoes, sun-dried tomatoes, and a pinch of kosher salt and freshly ground black pepper. Allow the sauce to simmer over medium heat for 10 to 15 minutes, stirring occasionally to prevent sticking.
  4. Optional puree and finish sauce: For a smoother texture, puree the sauce using an immersion blender if desired. Stir in the heavy cream and adjust seasoning with additional salt and pepper if needed.
  5. Cook pasta: Meanwhile, cook the penne pasta according to package instructions until al dente. Drain well.
  6. Toss pasta with sauce: Mix the cooked pasta with the prepared sauce and grated Parmesan cheese until evenly coated.
