- 1 cup loosely packed baby spinach
Instructions
- Prepare the base: Heat the olive oil in a large pan over medium heat. Add the minced garlic and shredded carrots, sautéing until aromatic and the carrots begin to soften, about 2-3 minutes.
- Cook the sausage: Add the Italian sausage links to the pan, breaking them apart with a spoon. Cook until fully browned and cooked through, approximately 5-7 minutes.
- Add liquids and noodles: Pour in the chicken or vegetable stock, crushed tomatoes, and sprinkle in the Italian seasoning. Add broken pieces of the oven-ready lasagna noodles, stirring everything together to combine well. Bring the mixture to a boil, then reduce heat to a simmer. Cover the pan with a lid and cook for about 15 minutes, stirring occasionally, until the noodles are tender and cooked through.
- Add spinach and cheese: Stir the baby spinach into the pan until wilted. Sprinkle shredded mozzarella cheese evenly over the surface. Combine ricotta and Parmesan cheeses in a small bowl, then drop spoonfuls on top of the mozzarella. Cover the pan and let it sit off heat for a few minutes until the cheese melts.
