Instructions

  1. Whisk eggs: In a medium bowl, whisk together the 4 eggs until fully blended.
  2. Add seasonings: Stir in chili powder, garlic powder, cumin, and kosher salt; whisk until combined evenly.
  3. Cook eggs: Heat olive oil in a skillet over medium-low heat. Add the egg mixture and cook, stirring and scraping occasionally, until eggs solidify but remain soft, about 3 to 4 minutes.
  4. Form texture: As you scrape, the eggs will start to clump into a meat-like texture. Avoid over-scraping to keep pieces from becoming too small; just scrape enough to combine the eggs nicely.
  5. Warm tortillas: If possible, warm and char the tortillas by placing them directly over a medium open gas flame for a few seconds per side using tongs, until slightly blackened and warmed through.
