Ingredients
For the Noodles
- 4 oz. rice noodles
For the Sauce
- ⅓ cup tahini
- 1 clove garlic, grated or minced
- 2 tablespoons tamari or soy sauce
- 2 teaspoons toasted sesame oil
- 1 teaspoon honey or maple syrup
- 1 teaspoon chili crisp (adjust to taste)
- 2 tablespoons rice vinegar
- Hot water (to thin sauce as needed)
For Garnish
- Additional chili crisp
- Sesame seeds
- Green onions, chopped
- Lime juice (optional)
Instructions
- Cook the noodles: Prepare the rice noodles according to the package instructions. For faster preparation, soak soakable rice noodles in hot water while preparing the sauce.
- Make the sauce: In a bowl, whisk together tahini, grated garlic, tamari, toasted sesame oil, honey or maple syrup, chili crisp, and rice vinegar until well combined. If the sauce is too thick, add hot water a tablespoon at a time, whisking until the sauce is thick but pourable and drizzly.
- Combine noodles and sauce: Drain the noodles and toss them in the prepared tahini sauce, mixing thoroughly to coat the noodles evenly.
- Garnish and serve: Top the noodles with additional chili crisp, sesame seeds, chopped green onions, and a squeeze of lime juice if desired. Serve immediately and enjoy!
Notes
- Use soakable rice noodles to speed up preparation by soaking in hot water rather than boiling.
- Adjust the amount of chili crisp based on your preferred spice level.
- Honey can be substituted with maple syrup for a vegan option.
- If you prefer gluten-free, make sure to use tamari instead of soy sauce.
- Leftover noodles can be refrigerated and eaten cold or gently warmed up.
