Description

This Easy Chocolate Mousse recipe creates a rich and creamy dessert using high-quality dark chocolate, fluffy whipped cream, and perfectly whisked egg whites. The mousse is silky, airy, and beautifully garnished with whipped cream, grated dark chocolate, and fresh raspberries, making it an elegant yet simple treat perfect for any occasion.

Ingredients

Chocolate Base

  • 200 grams 70% Dark Chocolate (e.g., Menier)
  • 30 grams Unsalted Butter

Cream

  • 250 millilitres Double Cream (cold; heavy cream in the US)

Eggs and Sugar

  • 4 medium Eggs (room temperature, separated)
  • 2 tablespoons Caster Sugar

For Garnish

  • Cocoa Powder, for dusting
  • Whipped Cream, for topping
  • Grated Dark Chocolate, for decoration
  • Fresh Raspberries, for garnish

Instructions

  1. Melt Chocolate and Butter: Break the chocolate into a bowl, add the butter, and microwave in 30-second intervals, stirring between each until the mixture is smooth, melted, and glossy. Set aside to cool.
  2. Whip the Cream: Using an electric whisk, whisk the cold double cream until soft, pillowy peaks form (about 3-4 minutes). Be careful not to over-whisk to prevent splitting. Set aside.
  3. Separate Eggs: Separate the egg yolks and whites into two large bowls.
  4. Whisk Egg Yolks and Sugar: Whisk the egg yolks and caster sugar together for about 5 minutes until the mixture becomes voluminous and pale yellow.
  5. Whisk Egg Whites: Whisk the egg whites to stiff peaks (about 5-6 minutes). The peaks should be firm enough that the bowl can be held upside down without the whites falling out.
  6. Combine Chocolate with Egg Yolks: Pour the cooled melted chocolate mixture into the whisked egg yolks and gently fold to combine.
  7. Add Whipped Cream: Fold the whipped cream into the chocolate and egg yolk mixture until smooth and well combined.
  8. Fold in Egg Whites: Add the whisked egg whites in two stages, carefully folding in a figure-of-eight motion to preserve air and achieve a light texture. Avoid overmixing.
  9. Chill the Mousse: Divide the mousse evenly between two large or four small serving pots. Cover with clingfilm and refrigerate for at least 3 hours or overnight to set properly.
  10. Serve and Garnish: When ready, dust the mousse with cocoa powder, add a spoonful of whipped cream on top, and garnish with grated dark chocolate and a fresh raspberry.

Notes

  • Use room temperature eggs to ensure better volume when whisking.
  • Make sure the chocolate mixture is cooled before combining with eggs to avoid cooking the eggs.
  • Be gentle when folding to keep the mousse airy and light.
  • Double cream can be substituted with heavy cream as commonly found in the US.
  • The mousse keeps well in the fridge for up to 2 days.
  • For a stronger chocolate flavor, use chocolate with a higher cocoa percentage.
