Ingredients
Buffalo Sauce
- ½ cup extra-virgin olive oil
- ½ cup hot sauce
- 2 teaspoons smoked paprika
- 1–2 teaspoons freshly ground black pepper (plus more for garnish)
- 1 teaspoon garlic powder
- Kosher salt (to taste)
Cauliflower and Coating
- 2 heads cauliflower (broken into florets, about 6 cups)
- 1¼ cups panko bread crumbs
- ½ cup grated Parmesan cheese
- ⅓ cup grated cheddar cheese
Ranch Dip
- ½ cup full-fat plain Greek yogurt
- ¼ cup buttermilk (plus more as needed)
- 1 tablespoon chopped fresh chives (plus more for garnish, optional)
- 1 tablespoon chopped fresh dill
- Kosher salt and freshly ground black pepper (to taste)
Instructions
- Preheat the oven: Start by setting your oven to 425°F and lining a rimmed baking sheet with parchment paper to prevent sticking.
- Prepare the buffalo sauce: In a medium mixing bowl, whisk together the olive oil, hot sauce, smoked paprika, freshly ground black pepper, garlic powder, and a pinch of kosher salt until well blended.
- Season the cauliflower: Place the cauliflower florets in a large bowl and drizzle half of the prepared buffalo sauce over them. Mix thoroughly to ensure all the florets are evenly coated. Set aside the remaining sauce for later use.
- Coat with bread crumbs: In a separate shallow bowl, combine the panko bread crumbs and grated Parmesan cheese. Roll each coated cauliflower floret in the bread crumb mixture, pressing gently to help the crumbs stick. Arrange the breaded florets in a single layer on the prepared baking sheet.
