Pizza Dough

  • 1 ½ teaspoons instant or rapid rise yeast
  • 1 cup room temperature water (8oz)
  • 1 teaspoon granulated sugar
  • 2 ⅓ cups all-purpose flour (290g)
  • 2 tablespoons olive oil (plus extra for greasing the pan and your hands)
  • 1 teaspoon table salt

Toppings

  • 8 ounces shredded Monterey Jack cheese (about 2 cups)
  • 2 ounces shredded whole milk mozzarella cheese (about ½ cup, or additional Monterey Jack)


Instructions

  1. Prepare the pizza sauce: In a medium bowl, mix together all the sauce ingredients until well combined. Cover and refrigerate the sauce until needed. The sauce can be made up to one or two days in advance to enhance flavors.
  2. Prepare the pan: Spray a 13x9-inch nonstick baking pan with vegetable cooking spray and then brush the bottom and sides generously with olive oil. Set the pan aside.
  3. Mix the dry ingredients for dough: In a stand mixer fitted with a dough hook, combine the flour, sugar, and yeast. With the mixer on low speed, slowly add the water and 2 tablespoons of olive oil to the mixture.
  4. Knead the dough: Mix until no dry flour remains, scraping the bowl as needed. Cover the bowl with plastic wrap and let the dough rest for 10 to 15 minutes.   8. Preheat oven: Adjust your oven rack to the lowest position and preheat the oven to 500°F (260°C).
  9. Add cheese and sauce: Combine Monterey Jack and mozzarella cheeses in a bowl. Sprinkle the cheese mixture evenly over the dough all the way to the edges of the pan to ensure a crispy cheese crust. Spoon three strips of the prepared sauce (approximately ⅓ heaping cup each) lengthwise over the cheese in the pan.
  10. Bake the pizza: Place the pan in the preheated oven and bake immediately until the cheese is bubbly and has browned nicely, about 15 minutes.
