Description
This Date Snickers recipe is a delicious, no-bake treat combining the natural sweetness of Medjool dates with creamy peanut butter, rich melted chocolate, and crunchy peanuts. Perfect for a quick, wholesome snack or dessert, these bars are easy to prepare and delightfully satisfying.
Ingredients
Ingredients
- 20 Medjool dates (pitted)
- 3/4 cup semisweet chocolate chips (or milk chocolate chips)
- 2/3 cup natural creamy peanut butter (stirred)
- 1/2 cup peanuts (coarsely chopped)
- 1/4 tsp kosher salt (optional)
Instructions
- Flatten Dates: Line a baking sheet with parchment paper. Pit the dates and open them so the sticky centers are facing up. Arrange the dates side by side on the parchment paper to form a rough rectangle shape. Cover with a second sheet of parchment paper and use a rolling pin or the back of a cup to press the dates into an even layer, ensuring all spaces are filled.
- Spread Peanut Butter: Remove the top layer of parchment paper and spread the peanut butter evenly over the dates. An offset spatula is helpful for achieving an even layer.
- Melt Chocolate: In a microwave-safe bowl, heat the chocolate according to the package instructions until melted. Stir the chocolate every 30 seconds; it usually takes 60 to 90 seconds to fully melt.
- Drizzle Chocolate: Drizzle the melted chocolate over the peanut butter, then use a spoon or offset spatula to spread it into an even layer over the peanut butter.
- Add Peanuts and Salt: Sprinkle chopped peanuts over the melted chocolate and gently press them into the chocolate. Sprinkle on the kosher salt if using.
- Chill and Cut: Refrigerate the bar uncovered until the chocolate is firm, about 1 hour. Alternatively, freeze it for 30 minutes. Once the bark is set, use a knife to cut it into Snickers-sized bars.
Notes
- Ensure dates are completely pitted before flattening to avoid any hard pieces.
- Use natural peanut butter for a creamier, less sweet option.
- If you want a dairy-free version, opt for dairy-free chocolate chips.
- Press peanuts gently into the melted chocolate to keep them secure once hardened.
- Store leftover bars in an airtight container in the refrigerator for up to one week.
