Instructions
- Prepare the dough: In a large bowl, whisk together the active yeast, sugar, flour, salt, and chopped fresh rosemary until well combined. Gradually add the lukewarm water in a steady stream while stirring with a wooden spoon until the dough starts to come together into a ball. Transfer the dough to a floured surface and knead until smooth and elastic, about 8-10 minutes.
- Let the dough rise: Coat the dough ball lightly with 1 teaspoon of olive oil. Place the dough in a clean bowl and cover it with a dishtowel. Let it rise in a warm spot until it doubles in size, approximately 1 hour. Once risen, punch down the dough and knead lightly to form a smooth ball. Using a rolling pin, roll the dough out into a 9 to 10-inch circle about 1/2 inch thick.
- Grill the flatbread: Preheat a grill pan over medium heat. Brush one side of the dough lightly with about 1/2 tablespoon olive oil. Place the flatbread oil-side down onto the grill pan. Cook for 1 to 2 minutes until bubbles start to form on the surface, then brush the top side with the remaining olive oil and flip carefully. Cook the other side for another 1 to 2 minutes until lightly charred and cooked through.
- Assemble the flatbread: Remove the flatbread from the grill pan and immediately season with salt. Let it cool slightly for a few minutes. Spread the creamy goat cheese evenly over the warm flatbread. Top with fresh arugula, sliced dates, and toasted pine nuts. Season with a bit more salt and freshly ground pepper to taste.
