Description

This classic Australian Curried Sausages recipe features tender beef sausages simmered in a flavorful, mildly spiced curry sauce with carrots and peas. Perfect for a comforting weeknight dinner, the dish is quick to prepare and served best over rice or mashed potatoes.

Ingredients

Main Ingredients

  • 1 tablespoon vegetable oil
  • 500 g beef sausages (1.1 lb)
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 ½ cups beef stock (beef broth)
  • 1 tablespoon curry powder (Keens recommended)
  • 1 ½ tablespoons plain flour (all-purpose)
  • 2 medium carrots, sliced into coins
  • 1 cup frozen peas
  • 2 tablespoons fruit chutney
  • ½ teaspoon salt or to taste
  • Salt and pepper, to taste (optional)

Instructions

  1. Heat the Oil: Warm the vegetable oil in a large frypan or skillet over medium-high heat to prepare for frying the sausages.
  2. Brown the Sausages: Add the beef sausages and fry them, turning often, until they are browned all over and nearly cooked through. Remove from the pan and allow to cool slightly before cutting into bite-sized pieces.
  3. Sauté Onions: Using the same pan, reduce heat to medium and add the thinly sliced onion. Cook while stirring occasionally until the onions become translucent and soft.
  4. Add Garlic, Curry Powder, and Flour: Stir in the minced garlic and sauté for one minute. Then add the curry powder and plain flour, cooking and stirring continuously for another minute to form a flavorful base.
  5. Simmer with Stock and Carrots: Pour in the beef stock and add the sliced carrots. Bring the mixture to a boil, then reduce heat to a simmer. Allow it to cook for about 5 minutes until the sauce thickens slightly and the carrots soften.
  6. Incorporate Chutney, Salt, Sausages, and Peas: Mix in the fruit chutney and salt. Immediately add the browned sausage pieces and frozen peas to the pan. Cook for an additional 3-4 minutes until everything is heated through and the sauce is thick and flavorful.
  7. Season to Taste: Taste the curry and add salt and pepper if needed to balance the flavors according to your preference.
  8. Serve: Spoon the curried sausages and sauce over cooked rice or mashed potatoes for a hearty, comforting meal.
  9. Feedback: Take a moment to leave a comment and rating to share your experience with the recipe.

Notes

  • Using plain flour helps thicken the sauce; you can substitute with gluten-free flour if desired.
  • The fruit chutney adds sweetness and depth; alternatives like mango chutney or pineapple jam work well.
  • Cooking sausages until nearly done before cutting ensures they hold together during simmering.
  • This recipe can be adapted with chicken or pork sausages if preferred.
