Description

This Crunchy Breaded Chicken Sandwich features perfectly pounded and seasoned chicken breasts coated in a crispy gluten-free panko mixture, fried until golden and juicy. Paired with a tangy homemade honey mustard sauce and fresh lettuce and vegetables, all sandwiched in toasted buns, this recipe delivers a satisfying crunch and balanced flavor in just 35 minutes.

Ingredients

Chicken and Coating

  • 4 chicken breast halves (smaller, thinner, room temperature; if using 2 thick ones, cut in half lengthwise)
  • ¾ cup gluten free panko breadcrumbs
  • ¾ cup flour (gluten free flour blend or regular)
  • 2 large eggs, lightly beaten
  • Salt and black pepper, to taste
  • ½ teaspoon paprika
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • Vegetable oil, about ⅓ cup for every 2 chicken breasts, for frying

Honey Mustard Sauce

  • Honey Mustard Sauce (ingredients as per notes - typically honey, mustard, mayonnaise, vinegar or lemon juice)

Burger Assembly

  • Lettuce and vegetables of choice (e.g., tomato slices, onions, pickles)
  • Burger buns (gluten free if desired)

Instructions

  1. Make the Honey Mustard Sauce: Combine all the honey mustard sauce ingredients in a mason jar, close the lid tightly and shake well to mix. Store the sauce in the refrigerator while preparing the sandwiches.
  2. Prep the Coating Bowls: Arrange three bowls in a row: one with flour, one with lightly beaten eggs, and the last with gluten free panko mixed with paprika, onion powder, and garlic powder.
  3. Prepare the Chicken: Place the chicken breasts between two sheets of plastic wrap and gently pound them to an even thickness on both sides. Remove the plastic wrap and season both sides with salt and black pepper generously.
  4. Coat the Chicken: Dredge each chicken breast first in flour, shaking off excess, then dip in eggs, and finally coat thoroughly with the seasoned panko mixture, pressing gently to ensure it adheres completely.
  5. Cook the Chicken: Heat vegetable oil in a skillet over high heat. When hot, add the chicken breasts in a single layer without crowding. Cook each breast for 3-4 minutes on each side until deep golden brown and crispy. Remove the chicken and drain on paper towels to remove excess oil.
  6. Toast the Buns and Prep Toppings: While the chicken is resting, toast the burger buns to your desired level and prepare lettuce and sliced vegetables.
  7. Assemble the Sandwiches: Spread honey mustard sauce on the buns or directly on the chicken, layer with lettuce, vegetables, and crispy chicken. Top with the remaining bun halves and serve immediately for best texture and flavor.

Notes

  • For the honey mustard sauce, a simple mix of honey, Dijon mustard, mayonnaise, and lemon juice or apple cider vinegar works well.
  • Using thinner chicken breasts or cutting thick breasts in half ensures even cooking and crispy crust.
  • You can make this recipe gluten free by using gluten free flour and panko breadcrumbs.
  • Do not overcrowd the skillet when frying to maintain oil temperature and ensure crispiness.
  • Let the chicken rest for a few minutes after frying to maintain juiciness before assembling the sandwiches.
