- ⅔ cup pico de gallo
Lime Crema
- 8 oz sour cream
- 1-2 tbsp lime juice (see note)
- 1-2 small garlic cloves, minced
- salt to taste
- 1 tbsp fresh cilantro, chopped finely (optional)
- 1 tbsp tequila (optional)
Instructions
- Let's Marinate! Add the chicken breasts, lime juice, honey, minced garlic, onion powder, chili powder, oil, salt, and pepper to a large bowl or freezer bag. Mix well to coat and let marinate for at least 1 hour up to 4 hours to tenderize and infuse flavor. If you're short on time, skip this step and add all the marinade ingredients directly to your crock pot.
- Cooking Your Chicken: Place the marinated chicken into the crock pot and pour in 1 cup chicken stock. Cover and cook on high for 4 hours or low for 8 hours until the chicken is fully cooked and tender.
- Prepare the Lime Crema: In a small bowl, combine sour cream, lime juice, minced garlic, salt, cilantro, and tequila if using. Mix well and chill in the refrigerator until ready to use. For easy application, transfer to a squeeze bottle or a Ziploc bag with a small corner cut off.
