Description

This Steak Fingers recipe features tender cube steak strips coated in seasoned flour and fried to golden perfection. Served crispy and hot, these steak fingers make an easy and satisfying meal perfect for dipping in white gravy or ranch dressing.

Ingredients

Steak Fingers

  • 1.5 pounds cube steak patties
  • 2 eggs
  • 1 cup flour, divided
  • 1 tablespoon salt seasoning blend, divided
  • 1 teaspoon freshly ground black pepper, divided
  • 1 cup neutral frying oil (canola, avocado, or grapeseed)

Instructions

  1. Cut Steak Into Strips: Use scissors to cut each cube steak patty into strips, usually obtaining 3 strips per steak for even cooking.
  2. First Flour Coating: Place the steak strips on a plate and sprinkle with half of the flour, half of the salt seasoning blend, and half of the black pepper. Toss gently to coat all pieces evenly.
  3. Prepare Egg Mixture: Break the eggs into a shallow dish and beat together with the remaining salt seasoning blend and black pepper until well combined.
  4. Dip and Double Coat: Dip each steak strip into the beaten egg mixture, then return them to the plate with the flour. Sprinkle the remaining flour on top and toss lightly to ensure a thorough coating.
  5. Heat Oil for Frying: Heat the neutral frying oil in a large skillet, preferably cast iron, over medium-high heat until shimmering. Test readiness by adding a pinch of flour to the oil; it should lightly sizzle.
  6. Fry the Steak Fingers: Carefully place the coated steak fingers into the hot oil. Fry the first side for about 5 minutes until golden brown and crispy. Flip each strip and lower the heat slightly to finish cooking the other side. Fry in two batches for best results. Serve immediately hot with white gravy or ranch for dipping.

Notes

  • Ensure the oil is hot enough before frying to achieve a crispy crust without absorbing excess oil.
  • Do not overcrowd the pan to maintain even frying temperature and crispiness.
  • Use a neutral oil with a high smoke point for the best frying results.
  • Serve with your choice of dipping sauces like white gravy or ranch dressing.
  • Leftovers can be reheated in a skillet to retain crispiness.
