Ingredients
Polenta Mixture
- 2½ cups water (540ml)
- 1 clove garlic, grated
- ½ teaspoon dried oregano
- ¾ teaspoon salt
- ¼ teaspoon black pepper
- 1 cup polenta (160g)
Add-ins
- ½ cup freshly grated Parmesan cheese (18g)
- 1 tablespoon butter
- 4 tablespoons olive oil, divided (60ml)
Instructions
- Prepare the polenta mixture: In a medium saucepan, combine the water, grated garlic, dried oregano, salt, and black pepper. Bring this mixture to a simmer over medium-high heat to infuse flavors.
- Add the polenta: Slowly whisk the polenta into the simmering water to avoid lumps, whisking constantly for a smooth blend.
- Cook the polenta: Reduce heat to medium-low and cook for 5 minutes, whisking frequently until the polenta becomes smooth, starchy, and thickened.
- Thicken the polenta: Continue cooking for another 5 minutes, stirring occasionally and scraping the pot’s sides and bottom with a spatula until very thick and the grains are softened.
- Prepare the baking pan: Grease an 8×8-inch baking pan with nonstick spray, line it with parchment paper, then grease the parchment paper lightly to ensure easy removal.
- Mix in cheese and butter: Remove the pot from heat and stir in freshly grated Parmesan cheese and butter until well combined and creamy.
- Set the polenta in the pan: Pour the polenta into the prepared pan and spread evenly. Allow to cool to room temperature, then cover and refrigerate for 1 hour or until completely chilled and firm. It can be refrigerated overnight for convenience.
- Preheat the oven: Set the oven to 425°F (220°C) to prepare for baking the fries.
- Cut the polenta fries: Remove the chilled polenta slab from the pan and cut in half. Slice each half into ½ inch wide by 4 inch long pieces, resembling fries.
- Prepare for baking: Brush a large baking sheet with 2 tablespoons of olive oil. Arrange the polenta fries in a single layer with space between them. Brush the tops and sides of each fry with the remaining 2 tablespoons of olive oil for crispiness.
