Ingredients

- Egg roll wrappers (enough to make about 9 egg rolls)

Instructions
- Prepare the filling: In a medium bowl, combine the cole slaw mix, minced garlic, ground ginger, soy sauce, and salt and pepper to taste. Mix well to evenly distribute the seasonings.
- Cook the filling: Cover the bowl and microwave the mixture for 3-5 minutes until the cole slaw mix is cooked through but still slightly crisp. Drain any excess liquid to prevent sogginess and stir again to coat the vegetables evenly with the seasonings.
- Assemble the egg rolls: Lay out the egg roll wrappers on a clean surface. Place about 1/2 cup of the cooked filling in the center of each wrapper. Fold the sides of the wrapper inward over the filling, then roll tightly to close the egg roll securely.
- Prepare for baking: Lightly spray a baking sheet with cooking spray to prevent sticking. Arrange the assembled egg rolls on the sheet, spaced apart for even baking.
- Bake to crisp: Spray the tops of the egg rolls lightly with additional cooking spray. Preheat your oven to 375°F (190°C). Bake the egg rolls for 10-15 minutes, then carefully flip each egg roll to the other side. Continue baking for another 10-15 minutes or until all sides are golden brown and the wrappers are crispy.
