Ingredients

Breadcrumb Coating

  • 1 and 1/2 cups panko bread crumbs
  • 1 and 1/2 tablespoons vegetable oil

Fish and Batter

  • 3/4 pound tilapia (2 large or 3 medium fillets, each fillet cut into 2 to 4 pieces)
  • 1 large egg (beaten lightly)
  • 1/4 cup cornstarch
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper powder


Instructions

  1. Toast Breadcrumbs: Add vegetable oil and panko breadcrumbs into a skillet placed over medium-high heat. Stir continuously until the breadcrumbs become deep golden brown, ensuring even toasting. Transfer the toasted breadcrumbs to a shallow plate and let them cool to room temperature.
  2. Make Batter: Preheat the oven to 375°F (190°C). Spray a cookie sheet with non-stick cooking spray and set aside. In a shallow dish, whisk together the egg, cornstarch, chili powder, cumin powder, garlic powder, paprika, salt, and black pepper powder until thoroughly combined. Add the cut fish pieces and toss gently to coat all sides evenly with the batter mixture.
  3. Coat Fish: Transfer each piece of coated fish into the toasted breadcrumbs. Gently press each piece to ensure it is fully coated on all sides with the breadcrumbs. Place the coated fish pieces on the prepared cookie sheet, spacing them evenly. Repeat the process for all fish pieces.
