This classic Fried Rice recipe is a flavorful and satisfying dish featuring crispy bacon, jasmine rice, peas, scrambled eggs, and green onions all stir-fried to perfection with soy sauce. Perfect for a quick weeknight meal or leftover transformation, it combines savory, slightly smoky bacon with fluffy rice and fresh veggies in a simple skillet method.

- 5 slices bacon
- 3 eggs

- 1 cup jasmine rice (uncooked)
- 2 cups water
- ¾ cup frozen peas
- 2 green onions, sliced
Seasoning & Oil
- 3 tbsp soy sauce
- Vegetable oil (if needed, to make up 2 tablespoons grease)
Instructions
- Fry the bacon. Heat a large skillet over medium heat and cook the bacon slices until they are crispy. Once cooked, transfer to paper towels to drain excess grease but do not clean the skillet.
- Prepare the skillet with bacon grease. Ensure there are at least 2 tablespoons of bacon grease left in the pan; if less, add vegetable oil to reach that amount to fry the rice.
- Fry the rice. Add the uncooked jasmine rice to the skillet and fry for about 5 minutes, stirring occasionally until the rice becomes golden brown.
- Add water and peas, then cook. Pour in 2 cups of water and add the frozen peas, stir to combine. Cover the skillet, reduce the heat to low, and let the rice simmer for 12-15 minutes until the water is absorbed and rice is tender.
- Scramble the eggs. In a separate skillet, scramble the 3 eggs until cooked through, then set aside.
- Dice the bacon. Once cooled, cut the crispy bacon into small pieces.
- Combine all ingredients. When the rice is done cooking, add the scrambled eggs, diced bacon, and sliced green onions back into the skillet with the rice.
- Add soy sauce and stir. Pour in 3 tablespoons of soy sauce and stir everything thoroughly to blend the flavors. Cook for another minute to heat through, then serve immediately.
Notes
- Do not rinse or wipe out the pan after cooking bacon to retain flavorful bacon grease for frying the rice.
- If you prefer a vegetarian version, omit bacon and use vegetable oil instead.
- For more texture, you can add diced carrots or chopped bell peppers along with peas.
- Leftover cooked rice works well for this recipe to reduce cooking time.
- Adjust soy sauce to taste depending on salt preference.
