Ingredients

Cauliflower Bites

  • 1 head of cauliflower, cut into bite-sized florets
  • 3 large eggs, beaten
  • 1 1/3 cup panko breadcrumbs
  • 1/3 cup all-purpose flour
  • 1 1/4 teaspoons fine sea salt, divided
  • 1 1/4 teaspoons black pepper, divided
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Herbed Buttermilk Ranch Dressing (optional)

  • 1/4 cup mayonnaise (avocado oil mayo recommended)
  • 2 tablespoons buttermilk
  • 1 tablespoon fresh chives, thinly sliced
  • 2 teaspoons fresh dill, minced
  • 1 teaspoon fresh parsley, minced
  • 1 teaspoon dried minced onion
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon fine sea salt
  • 1/2 teaspoon freshly cracked black pepper


Instructions

  1. Prepare the Cauliflower: Remove the stalk from the cauliflower and dry the florets thoroughly with a paper towel. Cut into bite-sized florets, suitable for easy dipping and cooking.
  2. Set up the Breading Stations: In three medium bowls, prepare the coatings: mix flour with 1/4 teaspoon each of salt and pepper in one bowl; combine panko breadcrumbs with the remaining salt, pepper, garlic powder, and onion powder in the second; and beat the eggs in the third bowl.
  3. Bread the Cauliflower: Toss the cauliflower florets in the flour mixture to coat evenly. Shake off excess flour over a sheet pan lined with a wire rack. One by one, dip each floret into the beaten eggs, allowing excess to drip off, then coat thoroughly in the panko mixture. Set them aside on a sheet pan until ready to cook.
  4. Air Fry the Cauliflower Bites: Preheat your air fryer to 400°F (204°C). Place the breaded florets in a single layer in the air fryer basket. Cook for 11 minutes or until they are golden brown on the outside and tender inside. Monitor closely as air fryer times and temperatures can vary.
