Instructions

  1. Make the dough: In a large bowl, beat together the brown sugar and canola oil until well combined. Add the egg, honey, and lemon extract and continue beating until the mixture is smooth, about one to two minutes. In a separate large bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Cover the dough with plastic wrap and refrigerate for at least two hours to firm up.
  2. Bake the cookies: Preheat the oven to 350°F (175°C). Using a tablespoon or cookie scoop, form balls of dough and roll each in confectioners' sugar until coated. Place the dough balls about 2 inches apart on parchment-lined baking sheets and gently flatten each slightly.
