- Chill Equipment and Cream: Before starting, ensure the cream and all utensils, including a large bowl and hand mixer whisk or stand mixer whisk attachment, are thoroughly chilled to help the cream whip properly.
- Add Vanilla to Cream: Pour the heavy whipping cream into the chilled bowl. If using a fresh vanilla bean, slice it open and scrape the seeds into the cream; alternatively, add 1 1/2 teaspoons of vanilla paste or vanilla extract.
- Sift Sugar Over Cream: Sift the powdered sugar evenly over the cream and vanilla mixture to avoid clumps and ensure a smooth texture.
- Begin Whipping: Using a mixer on medium to medium-high speed, whip the cream until it starts to thicken and forms soft waves or swirls on top, approximately 5 minutes.
- Whip to Medium Peaks: Lower the mixer speed to medium-low or switch to a hand whisk to gently continue whipping for another 30 seconds to 1 minute until medium peaks form; the cream should hold shape yet remain soft and light.
- Avoid Overwhipping: Stop whipping at medium peaks to keep the Chantilly cream light and fluffy. Overwhipping to stiff peaks can result in a grainy or lumpy texture; for stiff peaks use, prepare stabilized Chantilly cream instead.
- Store or Use: Use the cream immediately or cover with plastic wrap touching its surface and refrigerate. It is best consumed within 24 hours for optimal freshness and texture.
