Instructions
- Prepare ingredients and blend: In the bowl of a food processor fitted with a chopping blade, combine the cold crumbled feta cheese, cream cheese, sour cream, 2 tablespoons of extra virgin olive oil, freshly squeezed lemon juice, minced garlic, and fine sea salt. Blend on high speed for 3 to 4 minutes, scraping down the bowl halfway through, until the mixture becomes completely smooth and creamy.
- Transfer and garnish: Spoon the whipped feta mixture into a shallow serving bowl. Use the back of a spoon to create swirling grooves on the surface. Drizzle the top with additional extra virgin olive oil, then sprinkle with crushed red pepper flakes, finely chopped parsley, reserved lemon zest, and freshly ground black pepper to taste.
- Serve: Serve the whipped feta dip immediately with pita chips, pita bread, or an assortment of sliced fresh vegetables for dipping. Alternatively, cover the dip and refrigerate until ready to serve.
