Instructions

  3. Add aromatics and vegetables: Stir in the chopped shallots, garlic, carrots, celery, Italian seasoning, salt, and black pepper. Continue cooking for another 5 minutes until the mixture is fragrant and the vegetables begin to soften.
  4. Simmer with broth: Pour in 6 cups of broth and bring the soup to a simmer over medium heat. Let it cook for about 10 minutes until the vegetables are tender and the flavors meld together.
