Sauce
- 2 tablespoons Olive oil
- 4 Garlic cloves, minced
- 1 Bell pepper, sliced into strips
- 1 tablespoon Flour
- 1/3 cup White wine (optional)
- 5.3 oz Sun-dried tomatoes, chopped
- 3.5 oz Spinach
- 1¼ cups Heavy cream
- 1/2 cup Parmesan cheese, grated
- Salt to taste
- Pepper to taste
- 1/2 teaspoon Paprika
- 1 teaspoon Thyme
- 1 teaspoon Oregano
- 2 tablespoons Parsley, chopped (for garnish)
Instructions
- Prep: Preheat your oven to 350°F (180°C) to prepare for baking the chicken after searing.
- Coat the chicken: In a shallow dish, whisk together flour, salt, pepper, paprika, and oregano. Dredge each chicken breast or thigh until fully coated, shaking off any excess flour.
- Sear the chicken: Heat 3 tablespoons of olive oil in a large skillet over medium heat. Sear the coated chicken for 3 to 4 minutes on each side until golden brown.
