Enoki Mushroom and Breadcrumb Topping
- 2 tablespoons unsalted butter (or extra virgin olive oil, divided)
- 2 ounces enoki mushrooms (separated into 1-inch pieces)
- Kosher salt and freshly ground black pepper (to taste)
- 1 garlic clove (grated)
- 1/2 loaf 12-inch crusty baguette (torn into rough 1/2-inch pieces)
Instructions
- Cook the Rice: Cook the black rice according to the package instructions until tender. Once cooked, remove from heat and allow it to cool for later use in the soup.
- Soak the Dried Mushrooms: Place the dried mushrooms in 1 cup of hot water and let them soak for 20 to 30 minutes until they soften. Strain the soaking liquid through a coffee filter or fine mesh to remove any grit. Reserve both the liquid and the rehydrated mushrooms for use in the soup.
- Sauté Fresh Mushrooms and Onions: Heat the olive oil and 2 tablespoons of butter in a large 5-quart Dutch oven or heavy soup pot over medium-high heat. Alternatively, transfer the soup in batches to a standing blender and blend until smooth, returning each batch to the pot. Stir in the mascarpone cheese and the cooked black rice, mixing well to combine and heat through.
- Prepare Enoki Mushroom and Breadcrumb Topping: Heat 1 tablespoon of butter or oil in an 8-inch skillet over medium-high heat. Add the enoki mushrooms and cook them undisturbed until browned on one side, about 3 minutes. Turn to crisp the other side. Season with salt and pepper, then remove mushrooms to a plate. Add the remaining tablespoon of butter and the grated garlic to the skillet. Stir for about 30 seconds until fragrant, then add the torn baguette pieces.
