Instructions
- Cook Gnocchi: Bring a large pot of salted water to a boil and cook the gnocchi according to the package instructions until they float to the surface. Drain well and set aside.
- Sauté Vegetables: Heat the extra virgin olive oil in a large skillet or Dutch oven over medium heat. Add the sliced mushrooms, minced onion, garlic, cayenne pepper, and Italian seasoning. Cook, stirring occasionally, for about 5 minutes until the vegetables are tender and fragrant.
- Add Liquids and Simmer: Pour in the white wine, vegetable broth, heavy cream, and add the thyme sprigs. Bring the mixture to a simmer and allow it to reduce by about half, concentrating the flavors and thickening the sauce.
- Combine Gnocchi and Cheese: Remove the thyme sprigs, then add the cooked gnocchi and grated parmesan cheese to the sauce. Stir everything together and cook for an additional 2 minutes to allow the flavors to meld and the gnocchi to heat through.
- Finish and Serve: Remove the skillet from heat. Garnish the creamy gnocchi and mushroom dish with chopped parsley and extra parmesan cheese if desired. Serve immediately while warm.
