For the Soup
- 1/2 Tablespoon olive oil or avocado oil
- 1 medium yellow onion, chopped

- 1 15 oz can black beans, rinsed and drained
- 1 1/2 cups frozen sweet corn or one 15 oz can, drained
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon sea salt
- 1 teaspoon ground pepper
- 1 28 oz can fire-roasted crushed tomatoes
- 4 cups low-sodium chicken broth or vegetable broth
- 1 1/2 pounds boneless skinless chicken thighs or chicken breasts
- 1/4 cup cilantro, plus more for topping
- Juice of 1 lime
For the Tortilla Strips
- 12 small corn tortillas, cut into 1/4-inch wide strips
- 2 Tablespoons olive oil
- 1 teaspoon sea salt, or to taste
For Toppings

- Shredded cheese
- Jalapeño slices
- Greek yogurt or sour cream
- Lime wedges for serving
Instructions

- Shred Chicken: Remove the chicken from the pot and let it cool slightly. Using two forks, shred the chicken into bite-sized pieces.
