Description

  • 15 ounce can black beans, rinsed and drained
  • 15 ounce can black eyed peas, rinsed and drained
  • 1 cup frozen sweet corn, thawed
  • 1 red bell pepper, diced
  • 1 orange bell pepper, diced
  • 1 jalapeño, seeded and diced
  • 2 avocados, diced
  • ½ red onion, diced
  • ½ cup cilantro, chopped

Dressing Ingredients

Instructions

  1. Combine Salad Ingredients: In a large bowl, add the rinsed and drained black beans and black eyed peas, thawed sweet corn, diced red and orange bell peppers, seeded and diced jalapeño, diced avocados, diced red onion, and chopped cilantro. Gently mix to combine all ingredients evenly.
  2. Prepare Dressing: In a small jar or bowl, whisk together the olive oil, freshly squeezed lime juice, honey, cumin, and garlic powder until emulsified and well combined.
