Instructions
- Preheat the Oven: Set your oven to 325°F (163°C) and prepare your cooking equipment.
- Prepare Muffin Pan: Spray a 24-cup mini muffin pan with cooking oil to prevent sticking.
- Make the Egg Mixture: In a medium mixing bowl, whisk the 7 large eggs until smooth. Add the ¾ cup bacon bits, 1 cup cottage cheese, 1 cup shredded Colby Jack cheese, ¼ teaspoon salt, and ¼ teaspoon black pepper. Stir until all ingredients are evenly combined.
- Fill Muffin Pan: Pour the egg mixture into a large measuring cup with a spout for easy pouring. Fill each muffin cup evenly, stirring the mixture occasionally during pouring to keep bacon and cheese well distributed.
- Bake the Egg Bites: Place the muffin pan on the upper rack of the preheated oven. Bake for 23 to 25 minutes, or until the egg bites are set, lightly golden on the edges, and a toothpick inserted in the center comes out clean.
