Instructions
- Prepare Cornflakes and Workspace: Measure out the cornflakes and place them to the side. Lay a piece of parchment or wax paper on a cookie sheet or countertop to set the cookies on later.
- Heat Honey Mixture: In a medium saucepan over medium heat, combine honey, granulated sugar, and salt. Heat until small bubbles form around the edges, just reaching a gentle boil, then remove from heat.
- Mix Peanut Butter and Vanilla: Immediately stir in the creamy peanut butter and vanilla extract until the mixture is smooth and uniform.
- Combine with Cornflakes: Pour the peanut butter mixture over the cornflakes and gently fold until the cornflakes are evenly coated without crushing them.
- Scoop Cookies: Using two spoons or a lightly sprayed cookie scoop, portion out the mixture into 16 evenly sized cookies, placing them on the prepared parchment or wax paper.
