Ingredients

Potatoes

  • 700 g potatoes, peeled and chopped into 3cm cubes

Corned Beef Hash

  • 340 g tinned corned beef, cut into 1cm cubes
  • 1 onion, finely chopped
  • 2 tbsp sunflower oil
  • 1 tbsp Worcestershire sauce (or Henderson's Relish)
  • Salt, to taste
  • Freshly ground black pepper, to taste

Optional Topping

  • Fried eggs, to serve


Instructions

  1. Boil the potatoes: Place the peeled and chopped potatoes in a pot of boiling water and cook until tender, about 10-15 minutes. Drain them thoroughly to remove excess moisture.
  2. Sauté the onions: While the potatoes are cooking, heat the sunflower oil in a large frying pan over medium heat. Add the finely chopped onion and fry for about 5 minutes until softened and lightly golden.
  3. Add main ingredients: Add the drained potatoes, cubed corned beef, Worcestershire sauce, salt, and freshly ground black pepper to the pan. Stir well to combine all ingredients evenly.
  4. Fry until crispy: Increase the heat to high and cook the mixture for 5 to 10 minutes, stirring occasionally, until the potatoes start to develop a crispy, golden crust.
  5. Optional crisping under grill: For extra crispiness, transfer the hash to an ovenproof dish and pop it under the grill for a few minutes until the top is nicely browned and crispy.
