Description

This Copycat Thin Mints recipe recreates the classic mint-chocolate cracker treat with a homemade twist. Featuring crispy Ritz crackers coated in smooth, mint-infused chocolate almond bark and adorned with festive sprinkles, these bite-sized snacks are quick to prepare and perfect for parties or everyday indulgence.

Ingredients

Chocolate Coating

  • 8 ounces (4 blocks) chocolate almond bark
  • 1/2 teaspoon avocado oil
  • 1/4 teaspoon mint extract

Base

  • 1 sleeve Ritz crackers (about 32 crackers)

Toppings

  • Sprinkles or nonpareils, for decoration

Instructions

  1. Melt the chocolate almond bark: Place the chocolate almond bark into a microwave-safe container and heat for 45 seconds. Stir, then microwave an additional 10 seconds if necessary until melted and smooth. Take care not to burn the chocolate.
  2. Add oil and mint extract: Once the chocolate is smooth, stir in the avocado oil and mint extract to create a glossy, mint-flavored coating.
  3. Prepare the workspace: Lay a sheet of wax paper on the counter to place the coated crackers on for drying.
  4. Coat the crackers: One by one, dip each Ritz cracker into the chocolate mixture, ensuring both sides are coated. Use a fork to remove the cracker from the chocolate, tapping off excess chocolate on the container edge.
  5. Decorate: Place the coated crackers on the wax paper and quickly add sprinkles or nonpareils before the chocolate sets.
  6. Set and store: Allow the coated crackers to set completely at room temperature. Once firm, remove them from the wax paper and store in an airtight container either at room temperature or in the refrigerator.

Notes

  • Use avocado oil or a neutral oil to maintain the chocolate’s smooth consistency and sheen.
  • Be careful not to overheat chocolate to avoid burning it; stir frequently while melting.
  • You can substitute Ritz crackers with similar buttery crackers if desired.
  • Store coated crackers in an airtight container to preserve freshness and prevent moisture absorption.
  • For a stronger mint flavor, adjust the mint extract slightly but avoid adding too much to prevent bitterness.
